This program depicts a day in the life of the culinary community that feeds the Big Apple. The story begins in the Bronx, just after midnight, with the first stirrings of the New York City Terminal Produce Market. At 2 a.m., Chelsea Market bakeries are busy making dough. Dal puri diaspora 2012

The recipe for dal puri traveled with indentured workers from India's Gangetic plain to southern Caribbean colonies in the 19th Century. In the 1960s the wrapped roti migrated from Trinidad to North America, where it is known as Caribbean or West Indian roti and is popular in cities like New York and Toronto. As the dish moved from home fire to street stall to restaurant chain, and from festival to fast food, the flatbread was radically transformed in ingredients, cooking method, ways of eating and, identity. Shot in Toronto, Trinidad and India, this documentary tracks dal puri's remarkable passage across space and time, linking colonialism, migration and the globalization of tastes. Crops went unsold, farm mortgages were called in by banks, hungry farmers protested, and robberies increased dramatically. The U.S. Army was called in to defend the nation's capital from veterans who were demanding that President Hoover and Congress pay a bonus for their services in World War I. The difference she observed was that pesticides have been used in the valley since the 1950s whereas in the foothills, where there is little agricultural industry, there is practically no pesticide use.
